Juicy Steak Wraps (Sunday leftovers at their best)

Every Monday in every restaurant in the U.K. That hosts a Sunday roast, there are leftovers… Meat, roasties, vegetables and there’s always something to be done with all of it.

A personal favourite for the leftover beef you may have is a juicy wrap:

Roasting hot pan smoking with hot oil, strips of beef rib, sliced portobello mushroom, red onion marmalade all seared for about 90 seconds and straight into a tortilla wrap with some crunchy salad leaves.

Red onion marmalade:

  • 10 red onions
  • 2tbsp dark brown sugar
  • 1 tbsp red currant jelly
  • 1tsp salt
  • 1/2 tsp pepper
  • 50g unsalted butter
  • 80 ml balsamic vinegar
  • 50ml red wine vinegar

Thinly slice the red onions and place in a large saucepan with the rest of the ingredients.

Cook for a about 2 hours on a low heat stirring occasionally. The thicker and darker it gets the better it tastes. Try not to burn it though there is a line.
